you wanna break up your workout to target your muscles and build strength. also gives the muscles you've worked time to recover. doing a full body workout every single time will burn you out and won't keep you going to the gym 5 times a week. you could do a full body day, but wouldn't recommend beating up your full body every gym session. For me breaking up workouts into leg day, back and biceps, chest and triceps..helps me recover and helps me perform well in the gym. but it's up to you eventually mate.
